this one has just so much to fill your heart with. from all the wholesome ingredients that are wrapped inside these rice paper rolls, to the homemade warming flavour of the peanut sauce.
when it’s summer i’m craving all things light and fresh.
especially when it is something that is nutrient-packed and loaded with veggies.
you can fill them as much (or as little) as you like. most of the time i fill them with whatever I have on hand. everytime I make them they turn out different.
I encourage you to do the same. wrap ‘em up with your favourite veggies, add some tofu or tempeh for extra protein. you can even add noodles and fruit. or maybe just make a few with just fruits and serve it as a dessert.
have fun with it. experiment.
because one thing i know for sure, you really can’t go wrong with something this easy and tasty. well.. maybe the 2 first rolls but once you get the hang of rolling them you can bust out enough for a meal in no time.
I love to dip them in my homemade peanut sauce. actually, I dip everything in peanut sauce (or peanut butter), it’s just that good. the sauce is rich in flavour and comforting. especially when you heat it up.
this peanut sauce will definitely elevate your rainbow rolls to the next level. serious yum.

for the spring rolls
for the peanut sauce
1/2 cup 100% peanut butter
3 - 4 ketjap sauce
1 - 2 tbsp maple or agave syrup
coconut milk (depends onhow thick you want the sauce to be)
2 tbsp sesame oil
1 - 2 tsp sambal
prep veggies and set aside for easy assembly.
prepare peanut sauce by adding all ingredients to a mixing bowl and mix together. set aside.
add hot water to a large shallow dish and prepare your rice papers according to the instructions on the packaging.
once the rice papers are soft, transfer to a clean slightly damp surface (this way they don’t stick to your plate)
Add carrots, red cabbage, avocado, mango, cucumber, bell pepper, lettuce and other desired fillings.
fold bottoms over the fillings and carefully roll until completely sealed.
