trust me on this. this will be the creamiest pasta sauce you’ve ever tried. it’s 100% dairy free yet tastes rich, and indulgent on its own. i’ve kept the sauce simple and haven’t used any other ingredients other than lemon juice, water, salt + pepper to season, garlic for and in depth of flavour and nutritional yeast (optional) for the cheesiness.
this is basically the perfect sauce. i just love the creamy cashew flavour and texture and it just seems to go well with pretty much anything. besides all this awesomeness it takes just 5 minutes to whip up a good batch (make yourself some extra, you’ll thank me later).
boil your favourite pasta, sauté some mushrooms, take a good handful fresh green leaves on the side, pour the sauce on it and you have the best crave-fulfilling dinner in no time at all.
that’s it. just a few steps and a small number of ingredients is all you need to create the most amazing pasta dish. your life is forever changed, so yum. NOTE: feel free to up the amount of seasonings to your personal taste.

ingredients creamy cashew sauce:
1 - 1 1/2 cup cashews (soaked but not necessary)
2 small garlic gloves
1 tsp salt + pepper
1/4 cup water
2 - 3 tbsp nutritional yeast (optional if you want a cheesy flavour)
ingredients pasta and mushrooms:
10 - 12 ounces vegan pasta
2 cups cremini mushrooms
chives finely chopped
bring a large pot of water to a boil. cook the pasta to al dente. drain and rinse.
meanwhile, add the cashews to a high-powered blender or food processor along with water, lemon juice, salt + pepper, nutritional yeast (optional) and garlic. blend until smooth. thin out with more water to desired consistency.
TIP: make extra, because this sauce goes with so many dishes and can be stored in a fridge for 3 to 4 days.
sauté mushrooms for about 5 minutes until starting to soften – if they are getting a bit dry, you can add a tablespoon or two off water and they will soak it up.
Serve the pasta and mushrooms on your favourite plate, pour the sauce all over, sprinkle some chives around as garnish and finish it up with some fresh leafy greens.
